Gathering data on food environments and food practices through photo elicitation in Copenhagen, Denmark: Implications for adapting the EAT-LANCET reference diet to local circumstances

Unhealthy diets are the leading cause of mortality and morbidity globally. Simultaneously, factors that influence diet-related ill-health also drive climate change. Acknowledging link between health environmental sustainability, in 2019 EAT-Lancet Commission outlined a diet beneficial for both humans planet. There has since been to adapt this range settings. Thus, Shifting Urban Diets project was initiated support City Copenhagen’s move towards planetary diet. Food environments key shaping dietary practices. To provide evidence on how Copenhagen residents experienced their food environments, one component explored, through photo-elicitation, from neighbourhood navigated engaged with environment. Ten participants attended participatory photo-elicitation workshops over three weeks November December 2019, photographing environment discussing implications human health. Data (photos, notes captions) were analysed thematically. Participants demonstrated myriad shape engagement. Beyond cost built environment, chose outlets allowed socialising, convenient enough make time other activities, aligned values understandings about role food. naturally drew links practices healthy sustainable when considering they would like When priorities align material factors, people more likely purchase healthy, foods.
